Citrus is starting to come into season, and I am going to enjoy it while it is here. One of the things on my bucket list is to travel somewhere warm during citrus season and indulge on tree-ripened fruit. But until then, I am giving thanks for all of our modern transportation and logistics companies who work hard to bring us the bounty of produce that we can’t produce here. 🙂
Four Citrus Salad
1 organic grapefruit, peeled and seeded
1 organic valencia orange, peeled and seeded
1 organic navel orange, peeled
1 organic satsuma, peeled
1/4 to 1/2 cup organic goji berries
Chop all of the citrus into bite-sized pieces and combine with the goji berries. I like to let this sit for a bit so that the goji’s can soak up some of the juice from the citrus, in fact, this can even be made the night before and the goji’s become quite plump.
Now it’s time to go and enjoy some of our beautiful Alberta sunshine. It may get cold here, but sunny skies are quite frequent, for which I feel quite blessed.
